Badaam (Almond) halwa is a royal and delicious Indian sweet which can be prepared using few ingredients. It requires some time to make this rich halwa but the end result makes it all worth. And this instant halwa mix makes the job so easy.
It is one of those sweets which is especially made during winters in our house. Every morning a spoonful of this halwa is consumed by family members, especially Children.
I have eaten badaam halwa a lot as a kid but about this instant halwa mix i came to know after my marriage. My mother in law gave me a box full of this instant halwa mix when i was travelling to USA during winters. And asked me to make little halwa every morning. Halwa made from this instant mix was a part of my daily breakfast for last few years during winter season, just a spoonful for me and my hubby. During weekends it was tough to satisfy our craving by few spoons, so we used to make more.
Store this instant halwa mix in airtight container in refrigerator and it will stay good for 5-6 weeks.

1 cup Almonds
3/4 cup Poppy seeds
3/4 cup Ghee
Water (as required)
Ingredients for making BADAAM HALWA from prepared Instant Mix
1/3 cup Instant mix
2 tsp Whole wheat flour
1 tsp Ghee
2-2.5 tbsp Sugar
1/4 cup Hot Water
Crushed almonds for garnishing
Soak almonds and poppy seed separately overnight.
Peel almonds and crush them in mixer to a coarse paste using minimum water required.( I used around 1/2 cup water)
Similarly, make coarse paste of poppy seeds using little water needed for grinding ( I used little less than 1/4 cup water)
In a heavy bottom non-stick pan add 1/2 cup ghee. And once its hot, add poppy seed paste and cook it on medium flame stirring frequently, till the mixture becomes litttle dry and gets some light brown color. It will take around 15 minutes.
Now add almond paste and cook further for 10 -12 minutes, stirring continuously. The mixture will become light and grainy.
Cook further for 5-8 minutes, stirring frequently and once mixture is completely dry and attains deep brown color, switch off the flame.
At this stage, cool down the mixture and store in air tight container in refrigerator for about 5-6 weeks.
Whenever you want to make halwa from Instant Mix –
Take little ghee in a pan. Add whole wheat flour and saute it for around 40 seconds, stirring continuously on medium flame.
Once flour changes its color slightly, add instant mix and cook it for 2 minutes.
When ghee is well combined with mixture, add hot water and mix well.
Next add sugar and mix well. Let halwa simmer for 2-3 minutes.
Serve warm. Garnish with chopped almonds.
To deskin almonds –
Boil water in a pan. Add soaked almond when the water starts bubbling. Let the almonds be in water for 1-2 min, they will start floating on the top.Switch off the flame. Tranfer floating almonds in another bowl filled with chilled water. Now take almond from cold water and rub it between finger and thumb, its skin will come out easily.
Use non stick heavy bottom pan for making instant mix. As in between the process of roasting, mixture sticks to surface of cooking vessel. Non stick pan helps a lot.
Adjust sugar as per your liking.
