A big hello to everyone. If you are making list of gifts for the coming festivals, then do add these homemade goodness for your near and dear ones. Homemade cookies which are made and packed with love, makes a unique present for family or friends during the festive season.
I recently made these Almond cookies for my family and everyone loved it.These are very easy to make and the outcome is light, crispy and mildly sweet. Whenever I bake these cookies, they are finished very quickly, no matter how big batch I bake. These goes very well with the daily tea and coffee, which makes their consumption more in my house. I have to make then in advance before the cookie jar gets empty.
Rich in flavor and great in texture, these cookies can make your festive mood more delightful.
1 1/2 cup all purpose flour
3/4 cup unsalted butter
1/4 cup + 3 tbsp Sugar
2 tbsp Milk
1/8 tsp Almond extract
1/2 tsp Baking powder
Pinch of Salt
1/2 cup Chopped almond
-Sift all purpose flour, baking powder and salt in a bowl and keep it aside.
-Cream together butter and sugar in another bowl, till sugar is dissolved and the mixture is light and fluffy.
-Add in milk, almond extract and mix well.
-Now add in dry ingredients and mix well till all dry flour is incorporated well. Do not overmix here.
-Form a soft and smooth dough. If required use hands to bring the dough together.
-Divide the dough in two portion and wrap each in plastic wrap.
-Put the wrapped dough in refrigerator for 60 minutes or freeze for 15 minutes. Doing this will help in rolling the dough and the shape of cookies will come out good.
-Preheat the oven to 350 degree F.
-Take out dough from refrigerator, unwrap it and roll it with rolling pin in desired shape having around 1/4 inch thickness.
-Sprinkle chopped almonds and roll again slightly, so that almonds are pressed inside the dough.
-Cut in desired shape either by knife or any cookie cutter .
-Place the cookies on ungreased baking sheet and bake at 350 degree F for 20-25 minutes.
-Keep checking the oven after 15 minutes mark, as every oven is different.
-When cookies color changes to slight golden from edges, take them out from oven and place them on cooling rack.
-Once completely cooled, store them in air tight container and enjoy for 2 weeks.
P.S – As I have divided the prepared dough in two portions, I baked cookies from half of the dough and freezed the remaining half. So that I can bake my cookies fresh whenever required.
-1/2 cup of Almond powder can also be used in place of 1/2 cup all purpose flour.
-If almond extract is unavailable, go ahead and use vanila extract. I did this once, it tastes great.
