1 cup All Purpose flour
¼ cup Powdered sugar
½ cup Unsalted butter (at room temp)
1 tsp Vanilla essence
¼ tsp Salt
¼ cup melted chocolate
>>Cream together butter and sugar using a whisk or a hand blender until the mixture is creamy.
>>Add vanilla essence and mix well again.
>>Now mix flour and salt until everything is incorporated well and this will result in a soft dough.
>>Divide this dough in two equal parts. Cover one part in cling plastic wrap and keep it in fridge for 30 minutes.
>>In the remaining half dough, add melted chocolate and mix well. Cover this chocolate dough also in cling wrap and place in fridge for 30 minutes.
>>After 30 minutes, roll both the dough separately in oval shape on parchment paper/butterpaper and then put rolled vanilla dough on top of chocolate dough and again roll very lightly so that both the dough slightly stick to each other.
>>Now form a log with the above dough sheet and carefully slice ¼ inch thick round cookies.
>>If you are unable cut proper round shape of the cookie, then wrap the log in cling plastic wrap and place it in fridge for around 30 minutes.
>>Place the cookies on baking sheet lined with parchment paper about 1 inch apart.
>>Now put this baking sheet with cookies in fridge for 20-30 minutes.
>>Preheat the oven to 350 degree F or 175 degree C .
>>After 20 minutes take out the baking sheet from fridge and place it in the preheated oven. Bake the cookies for around 10-15 minutes. Keep a close eye on your oven after the 10 minute mark, you want the cookies to be baked until a light color is seen on them.
>>Once the cookies are baked, let them cool on the baking sheet for 5-10 minutes. After this transfer them to cooling rack for half an hour to cool down completely and then you can store in airtight container.
