This salad is very easy to make and requires only a few ingredients. When guest are coming over for lunch/dinner, we are busy in planning and preparation of the food, by the time we come to salad we try to make it quick , easy and with less efforts.
So here is the recipe for a quick and different cucumber salad. An eye pleasing platter of salad will definitely increase the appetite for food in everyone. I learnt this recipe when I was in 10th standard from my maternal aunt “Shobha Gupta”. A special thanks to her for teaching me this salad recipe.
1 medium size Cucumber
1/4 cup thick curd/yogurt/hung curd
1/2 cup freshly grated coconut (dry coconut flakes can also be used)
2 tbsp milk
Salt, Black Pepper and Sugar as per taste
Few Tutti Frutti/Cranberries for garnish
Few Toothpicks for serving
1) Wash and peel the cucumber. Hold cucumber lengthwise in hand and cut thin slices of cucumber diagonally or at 45 degree angle. (try to keep the slices of medium thickness, neither too thin nor too thick).
2)In a small bowl, mix coconut, curd, milk, salt, black pepper and sugar. (Sometimes amount of curd and milk varies in this recipe. We need a thick mixture of coconut and curd, so adjust the quantities of curd and milk accordingly. )
3)Now take 1 tsp of this mixture and spread a thin layer of it on one side of the cucumber slice. Sprinkle few tutti frutti/cranberries and fold both the end of the slice towards the center and insert a toothpick in the center so that both the ends come together. (Before inserting the toothpick, place a piece of tutti frutti/cranberry at one end of the toothpick. So that when that toothpick is inserted into the center of cucumber slice, it gives a nice garnish)
4)Do the above step with all the remaining slices.
5)Cool the salad for 15-20 mins in refrigerator and serve.
