Sometime eating bananas or Oats alone in breakfast can be boring. But if we combine both and add in some nuts too, it will result in a super healthy and yummy dish.
Banana Oats and Walnut Cupcakes are eggless cupcakes made with over ripped bananas, Oats and Walnut. All healthy goodies packed in a single bite. The texture is so soft and moist without an egg too. So if overripe bananas are lying in your fruit basket, then make these healthy and heavenly delicious cupcakes and enjoy them in breakfast or snacks.
1 banana mashed
1/4 cup oil
1/2 cup sugar
1/2 cup all purpose flour
1/4 cup oats powder
1/2 tsp baking powder
1/2 tsp baking soda
2 tbsp curd
1/2 tsp vanilla essence
Above ingredients will make around 8 cupcakes.
-Preheat oven to 350 degree F.
-Line cupcake tray with liners or grease it with butter or oil.
-Mix all purpose flour, Oats powder, baking soda and baking powder in a bowl and keep it aside.
-Mash one over riped banana in a separate bowl with fork.
-Once banana is turned into thick paste, add oil and mix well.
-Now add sugar, curd, vanilla essence and mix well.
-Once all wet ingredients are mixed well, add in the dry ingredients slowly and mix well. Do not over mix the mixture. You can use a spatula to mix everything well.
-Add chopped walnuts and mix again. Reserve few walnuts for garnish.
-Pour the batter in cupcake moulds and bake at 350 degree F for around 20-25 minutes or until a toothpick inserted in center comes out clean.
-Use over riped banana, as it will decrease usage of sugar in recipe. You can adjust the amount of sugar as per your taste.
-Honey can also be used in place of sugar
-Any nuts , chocolate chips or dried fruits can be used in the recipe.
-Pinch of cinnamon powder can be added for extra flavoring.
